Coffee Time...Wellll....Maybe Not!

Kopi Luwak or cat poop coffee is widely known as the rarest, most expensive coffee in the world.  Retail prices  have reached as high as $80 a cup!!  This uniquely processed coffee comes from the coffee berries that have once been eaten and excreted by a cat called the Asian Palm Civet.  The farmer or coffee harvester then collects the defecated beans and begins processing them!

When the civets eat the coffee berries, fermentation of the coffee beans occurs in the cat's digestive system.  During this process, the cat's proteolytic enzymes seep into the coffee beans, thus creating shorten peptide as well as an abundance of amino acids.  This is what gives this coffee its unique flavour and aroma.  So during this entire digestive process, the beans are transformed into the Kopi Luwak many coffee drinkers have grown to adore.  This process is said to lower the bitterness of the coffee.

Mmmmm....interesting....I'll stick with Timmy's!!
